Soup for the Soul

A group of us have been detoxing and sharing recipes together. The key has been meal prepping so this is an easy soup to be made ahead of time.

If you've been on our Pink Pages on Facebook you may have seen that a bunch of us have teamed up together to do a Detox with REGENESIS Wellness Center in Scottsdale. It's a two week detox with supplements and clean eating. Everyone seems to be doing great and we've been sharing a lot of clean eating recipes together. Here is a simple soup recipe that has been a go to for many of us.


Detox Vegetable Soup

50 minutes

Ingredients

Vegan, Gluten free∙ Serves 8Produce

  • 1 tsp Basil, dried

  • 2 stalks Celery

  • 3 cloves Garlic

  • 1 lb Green cabbage

  • 1 cup Sliced Mushrooms

  • 1 Onion, medium

  • 1 tsp Parsley flakes

Baking & Spices

  • 1/4 tsp Cayenne pepper

  • 1/2 tsp Paprika

  • 1 tsp Sea salt


Instructions

  1. Heat 1/4 cup water in a large pot on medium high heat. Add onion and cook until soft, about 4 minutes.

  2. Add garlic, celery, onions, cook for 2 minutes, stirring constantly. Stir in parsley, basil, and cabbage.

  3. Cook for another 2 minutes. Add water or broth, paprika, cayenne pepper and salt.

  4. Cover pot and bring to a boil. Reduce to heat to simmer for 20-30 minutes. Serve!
